He uses the royal ‘we’, but speak for yourself. We didn’t eat processed food at home and my mother only bought fresh, local meat. I tasted my first hamburger in the US when I was nearly 40 and have never eaten them much since. As for pizza, when you’ve tasted a real one made in a Sicilian village, you never forget it.

When you’re brought up on proper food, you may try other things, but you probably revert to what tastes good and doesn’t harm your health.

All perfectly true, Belyi. Fresh, wholesome foods are always best. Unfortunately, we now live in a takeaway, processed food society, which is the slow kill switch to destroying the nation’s health.

The other day I was reading why the Japanese are so thin, which turns out to be that one of the reasons is that they eat a lot of bone broth.

As someone who has loved bone broth soup since childhood I often turn it into Scotch broth. I was shocked to discover that I might have been doing it incorrectly by simply heating the marrow bones for two or three hours. In order for the body to assimilate the goodness from the marrow bones, the Japanese slow-cook them for at least twelve hours, but ideally for fifteen hours. This allows all the collagen to break down. I must admit that after following the Japanese way I did taste a significant change, and with extra barley in the Scotch Both it was fair braw.
